Our passion for olives and making premium and super premium olive oil comes from many generations of farming the land. Our ancestors have been farming olives and producing olive oil for over 1,000 years. Our farms are located in Extremadura, Spain, a region bordering Portugal, which comprises the provinces of Caceres and Badajoz. Bathed by the warm sun, it is a natural paradise for olives to ripen in perfect harmony with nature. Some of our trees are over 200 years old and produce multiple award-winning extra virgin olive oil (EVOO).

Our work starts with the land which we care about and the olive trees we have cherished for generations. Our olives are naturally fertilized without the use of chemicals. We do as our ancestors did and maintain these old traditions alive. We bring you our EVOO directly from “our land” to your “table”. We are very proud of our ecological agricultural practices that provide a sustainable environment for our trees and contribute to the wellbeing of the planet.

To ensure that the best quality EVOO is produced, several farmers (about 2,000) in our region established a Cooperative “Cooperativa Virgen de la Estrella”. During the harvesting season, we bring, as soon as harvested, our olives to the cooperative where they are immediately processed. The process starts with the cleaning, then continues with the washing, and finally the Cold Press extraction. Only by doing cold press, we ensure that the flavors, aromas, and most importantly the polyphenols are not altered. All our oils are constantly checked at each stage of the process, by our quality control department, to ensure the best possible quality is attained. No oil leaves our premises if the strict quality standards are not met.

What Makes Texturas Extra Virgin Olive Oil (EVOO) Different?

Texturas Extra Virgin Olive Oil (EVOO) starts with the selection of the olive trees. Each mono cultivar tree is selected based on unique attributes to determine the right stage of ripening of the olives. The early harvest, as well as the proper process ensures the highest quality EVOO. Our Texturas premium and super olive oils are characterized by extremely pleasant organoleptic attributes such as the aroma, taste notes of fruit and well balanced acidity. Similarly, our Texturas olive oils are very high in nutritional value due to superb content of polyphenols (antioxidants), high content of fat soluble vitamins, rich heart-healthy fatty acid content, and low acidity.

Since its foundation, Virgen de La Estrella-Maimona has been known for the production of virgin olive oils of excellent quality and care for the environment; with more than 2,000 local farmers involved, it has been a pioneer in the use of innovative production techniques to improve the quality and sustainability of our products. The mild climate with little rain and the richly diverse vegetation give diverse tastes and "texturas" to our delicious olive oil.

How Our Olives Are Processed To Make Our Texturas Premium Extra Virgin Olive Oil (EVOO)

1. Olive Harvest:
After unloading the recently harvested olives, they are cleaned by hand to remove any leaves and small branches. This is followed by a washing process.

2. Oil Press
The washed olives are ground and then cold pressed, this is where the magic happens and the olive juice is extracted. This liquid is then centrifuged to remove the moisture, leaving a high quality extra virgin olive oil (EVOO).

3. Storage /Bottling
The recently extracted extra virgin olive oil (EVOO) is then stored in stainless steel tanks for 24 hours prior to being bottled.
